* Spiced Pear Cordial:
Roughly chop 2 Bosc pears and combine in a non-reactive container with 500g of sugar, the zest of 1 lemon, 1/8 teaspoon of ground cinnamon, 1/8 teaspoon ground mace, and 1/4 teaspoon of ground black pepper. Allow to macerate overnight. Combine with 250g of water over medium heat until sugar dissolves. Strain through a fine mesh strainer and add 1/2 teaspoon of citric acid powder and 1/2 teaspoon of malic acid powder. Stir to combine and bottle. Keep refrigerated.
