The Pier 21 Cocktail, named in honour of Halifax’s historic site, is a meticulously crafted blend featuring the distinctive flavour of Don Julio Blanco Tequila. Fresh lime and grapefruit juice add a bright burst of flavour while chamomile syrup introduces a unique floral touch. A hint of Green Tabasco and Nova Scotia sea salt provide a well-balanced twist to this memorable drink.

  • 45ml Don Julio Blanco Tequila 
  • 5ml Mezcal
  • 7.5ml Campari
  • 40ml Grapefruit Juice
  • 15ml Lime Juice
  • 15ml Camomile syrup
  • 2 dashes of Green Tobasco
  • 1 dash of Nova Scotia sea salt solution

Camomile syrup ingredients:

  • 20grm camomile tea 
  • 1000grms water 
  • 1000grms sugar
  • Method: Brew tea for 5 minutes. Remove tea bags. Add sugar. 


  1. Combine Don Julio Blanco Tequila, Mezcal, Campari, chamomile syrup, fresh lime juice, and fresh grapefruit juice in a cocktail shaker.
  2. Add the Green Tabasco and sea salt solution.
  3. Shake the mixture well to ensure all the flavours meld together.
  4. Strain the cocktail into a chilled glass.
  5. Garnish with a slice of grapefruit for an extra special touch.
